Mum, my very most favourite thing is baking.
I actually think her very most favourite thing is licking spoons, and eating treats fresh from the oven, and then carrying her secret surprise all the way to school ready to announce to siblings: WE MADE COOOOOKIIES for afternoon tea!
On her days off school, I am soaking her in, and inhaling these fleeting days; and making sure to spend some time doing her very most favourite things.
This time a request for chocolate chip cookies, and the holding of the packet of choc-chips all the way home in anticipation.
We blended all ingredients before stirring in the chocolate bits, spooned the sticky dough roughly on a tray with baking paper, and waited patiently as they baked until they were golden and fragrant.
They are not very very crunchy, but we think they are very very delicious and I thought you might like the ingredients list in case your very most favourite thing is to bake something yummy.
And the great and continued success of the Magic Bean Chocolate Cake means that I am sneaking healthy ingredients into treats wherever I can.
Choc-chip and Chickpea Cookies
130g chickpeas (about half a tin, after they are drained and rinsed)
1/2 tsp vanilla bean paste
80g rice malt syrup (or honey if you would like them sweeter)
pinch of sea salt
60g brown rice flour
50g chocolate chips
Makes about 14. Bake at 180C until golden.
